The production crew gets together once a week.  They begin their day at the restaurant to wash and sanitize any jars that have been used throughout the week.  Assemble any tools and ingredients we might need and then drive over to ACEnet.  ACEnet is where we have the space to prep bushels upon bushels of things like peppers and strawberries for pickling and freezing, roast lots of squash and jar all our goods.

Since we don't have much space at the restaurant for storage, ACEnet lets us rent space in their warehouse, refridgerators, and freezers.  ACEnet also has a nice loading dock for large shipments.
