There is a morning and evening crew of cooks.
The morning kitchen crew consists of a Cook 1, Cook 2, Cook 3 (on weekends), a Hot prep, a Dishwasher, and a Cold prep. The crew works together to generate not only the breakfast orders, but also produce the salsas and fillings that will be used throughout the dinner hours also.
The morning Cook 1 sets up the kitchen and makes each entrèe to order. Our morning Cook 2 dresses the entrèe with garnish; preps all the breakfast sides and makes sure we have enough beans and rice. Our morning Cook 3 is a prep cook on the weekends. They chop vegetables, green peppers, pre-cook tofu, and griddle pancakes and French toast to order.
Cook 1 P.M. creates a special entrè every night. Each cook picks a theme and works within that themes parameters. For example, Friday night's theme is Ecofish. The Cook 1 P.M. creates an entrèe like mussels, that have been sent to us from our sustainable fishing producer, Ecofish. It is also Cook 1's responsibility to make each entrèe from scratch.
Cook 2 P.M. garnishes all the entreès, prepares the sides and salads and helps make sure the order goes out correctly. It is also the responsibility of Cook 2 to clean the kitchen at the end of the evening. Casa Nueva prides ourselves on our cleanliness.
The Roller is the person who makes the flour tortillas used at Casa Nueva. They also create to order the delicious empanadas. They also collect all the recycling at the end of the night, and set it out for pick up.
