Production Crew

Roastin' PeppersThe Production crew, led by the Food Manufacturing Division coordinator, puts delicious local and organic food up for the year.  We have anywhere from 2 to 8 people on the crew at a time.  They are responsible for mainly: brining, freezing, and canning of the wide variety of produce we work with. 

They chop, fire- and oven-roast and brine beautiful peppers from Cowdery Farms and Shade River Farm and freeze rhubarb and any berry imaginable from the Chesterhill Produce Auction and other local farmers. They roast and jar tomatoes and tomatillos from several farmers.  Our FMD coordinator also scans the Athens Farmers Market on a regular basis looking for any other sort of produce our little hearts desire to savor for the upcoming year.  They jar applesauce in the fall with wonderful local apples and slice, roast, de-seed and freeze delicious local pumpkins and squash.Butternut Squash

During the height of the harvest season, the Production crew has had some long 15 hour days in the community kitchen at ACENet while following Casa's mission statement, but have had complete fullfillment in the end with beautifully packaged products. There are so many farmers that provide us with much more.
