The Cold Preps are the masters of the knife, Hobart, and ice cream maker who prepare all of our cold foods-- freshly chopped vegetables, grated cheeses, homemade ice creams, and from scratch salsas. 

They spend their shift receiving orders from and writing checks to our many producers.  They stock our coolers full of fresh food, then set to chopping, dicing, chiffonading, grating and processing foods to be used by the cooks throughout the day and listening to good music while they do it.
