The Rollers make the flour tortillas used at Casa Nueva. After making their dough, they spend their shift shaping and working the tortillas over a hot griddle. 

They work in tandem with the PM kitchen cooks to make fresh tortillas for dinner entrées while creating all of the tasty empanadas of the evening. 

At the end of the night, they are responsible for thoroughly cleaning their area and collecting all the trash and recycling in the house to put out for pick up the next morning.
