PM Kitchen Crew
The main kitchen serves the restaurant and consists of 2 line cooks and a Roller during the PM. Cook 1 is the captain of the ship, so to speak. Cook 1 creates a unique, special entrée every night, using fresh, local ingredients. Cook 1 makes each entrée to order and gives direction and coordination to the Cook 2 and Roller as needed.
Cook 1 is also responsible for communicating with the Bodega cooks and waitstaff as needed.
Cook 2 is their right hand man or woman, ensuring that the plates look exceptional. Cook 2 dresses each entrée with garnish, prepares the sides and salads and helps make sure each order goes out correctly. Cook 2 keeps the lines stocked, makes sure beans and rice are cooked, and communicateds directly with the waitstaff. It is also the responsibility of Cook 2 to clean the kitchen at the end of the evening.
